Broccoli is one of the essential vegetables that I get at the supermarket. It’s actually become a weekly routine to buy them as I never keep my refrigerate without it! But sometimes, it serves as a comforting food that is left untouched. Why? Well, after a long week of managing my kosher restaurant in Las Vegas, I end up feeling really exhausted! I dislike it when I waste broccoli. Nonetheless, I salvage them when I have time! One of my favorite food to make is homemade broccoli rice casserole.
Time-Saving Broccoli Rice Casserole
When you don’t have enough time to cook up a delicious meal, you can bake it instead. There’s nothing better than cutting up all your ingredients and adding them to a dish to cook for the next hour. Now, the question is, what will you be doing while you wait for your broccoli rice casserole to finish?
What you’ll need:
1 cup brown rice (cook by following package’s directions)
2 lbs chopped broccoli
3 tbsp vegetable oil
1 chopped onion
1 minced garlic
1 tbsp soy sauce
3 beaten eggs
2 cup shredded Monterrey Jack cheese
Cook your brown rice according to the directions on the package. Using a large pan, heat the oil at medium-heat. Sautee the onions until they are caramelized, and add garlic to it. Bring the heat to high temperature and combine with broccoli and saute this for about 5 minutes.
Mix the cooked rice, broccoli mixture, soy sauce, and eggs altogether. Add 1 cup of cheese with it.
Preheat your oven to 300 degrees Fahrenheit, and grease your casserole dish.
Pour the mixture into the dish and top it with cheese. Bake this for about 45 minutes and enjoy your meal!
