Apart from all the delicious meat that we serve at our kosher restaurant in Las Vegas, we like to go healthy when we’re at home. After all, there’s nothing like keeping your health in check, right? One of the most typical dishes we make is this particular kosher salad. With summer on the rise, it’s a great plate that hydrates the body and is quite refreshing as well.

Once, we served this kosher salad as an appetizer for a wedding party, and people loved it. Of course, it was one of those warm summer evenings where people enjoyed a delicious treat that was served fresh. We weren’t too sure about what people thought about it until the bride rang us up a month later, and told us the good news.

It was one of those recipes that she casually made up on her own, and we didn’t realize the amazing taste of it until we were old enough to appreciate salad. Weirdly enough, this cucumber salad is so easy to make that we decided to share it here with you all!
What You’ll Need:
1/2 lb cherry tomatoes (sliced in halves)
¼ chopped cilantro
1 diced avocado
¼ diced red onion
1 lemon (freshly squeezed)
2 tbsp olive oil
1 tsp salt
1 tsp pepper
In a salad bowl, place cucumber, red onion, avocado, tomatoes, and cilantro together. Drizzle lemon juice and olive oil together, and then sprinkle the salt and pepper. Evenly toss this for about one minute.
