Flavorful Slow Cooked Beef and Barley Stew

What You Will Need:

2 pounds of stew meat (cut into small chunks)

1 chopped onion

1 ¼ cup pearl barley

5 peeled and chopped carrots

8 ounce sliced mushrooms

½ cup of diced tomatoes

1 cup sliced potatoes

2 6-oz can tomato paste

⅓ cup of fresh parsley

4 cups of water

3 tbsp Worcestershire sauce

5 cloves of minced garlic

Green onions (optional for garnish)

Salt and pepper to taste


Using a large skillet, cook the meat stew over medium heat for about 6 minutes. Stir this often. Add parsley, carrots, garlic, potatoes, onions, salt and pepper and cook for another 6 minutes. Turn off the stove, and place the content in the slow cooker. Combine this water, barley, Worcestershire sauce, tomato paste, and diced tomatoes in the pot. Evenly blend it together and cook it on high heat about 5 hours. For a longer sitting, put it on low heat for about 8 hours. Serve and enjoy!
