Kosher Pumpkin Soup

Kosher pumpkin soup is such a satisfying treat to have specially in the fall season when it is everywhere. This delicious soup is a great base for dipping grilled sandwiches or served plainly with croutons! So let’s get started!

What You’ll Need:

2 pounds cubed pumpkin

2 cups of chicken stock

⅓ nondairy creamer

2 ¼ cups large onion

3 tbs oil

1 1/2 cups water

1 tsp pepper

1 tsp salt

In a saucepan, toss the onion until they are caramelized. After that, add the pumpkin and water together. Once the pot is boiling, cover your saucepan with a lid, and lower the heat until it simmers for about 40 minutes. Let it cool. Once, it is safe, pour everything in a blender to puree it. This process has to be smooth leaving no chunks of pumpkin. When finished pureeing, add chicken stock, pepper, and salt into the original saucepan along with the puree. Simmer for an additional 5 minutes. Stir your creamer into the saucepan and let it sit for another five minutes until you can remove it from the heat. Serve warm with croutons!
