What you’ll need:

  1. 9 cups water
  2. ¼ cup olive oil
  3. 5 sliced carrots
  4. 7 mashed garlic
  5. 10 ounce sliced mushroom
  6. 4 sliced celery
  7. 2 tsp grated ginger
  8. 2 ½ chopped onions
  9. 1 ½ tsp basil
  10. 1 ½ kosher salt
  11. 2 parsnip

Additional: Matzoh Balls

Directions:

In a skillet, saute carrots, onions, parsnip, and sliced celery. Do this for about 5 minutes, and make sure that the vegetables do not brown. When finished, add garlic and ginger for about 2 minutes. Add mushrooms, and saute until the juices are released. Add water, and bring it to a boil. Slowly stir the salt and basil together. Let everything simmer for about 40 minutes until the broth is nice and golden. You’re ready to add the matzoh balls to the soup. Continue to simmer this delicious kosher food for about 5 minutes longer, and serve!
