When you want something filling for lunch, eat a chicken schnitzel. They’re perfect for a Sunday afternoon or a lunch for work. Whatever your reason to eat this delicious meal, you want to make sure you have it fresh! So, we’ve come up with a schnitzel recipe that is sure to blow you away.
What You’ll Need:
1 tbsp lemon juice
1/2 cup chicken broth
1/4 cup white wine
1 tbsp butter
4 tbsp olive oil
4 chicken cutlets
1/2 cup parmesan cheese
1 cup fresh breadcrumbs
1/2 tsp parsley
1 minced garlic
salt and pepper to taste
Add salt, pepper, parsley, garlic, and beaten eggs in a shallow bowl. Using a separate bowl, mix breadcrumbs (you can pulse a few bread slices in a food processor to get fresh crumbs) and cheese.
Dip your cutlets into the mixture of beaten eggs and coat this completely. After that, add a generous amount of breadcrumbs and pat it, so it sticks to the meat.
For about two cutlets of chicken, you want to heat about two tablespoons of oil in a non-stick pan over medium-high heat.
Cook the two cutlets into your pan until it is golden brown which can take about three minutes per side.
Transfer the chicken cutlets over another pan or an oven-proof platter and keep this warm in the oven. Cook the rest of the cutlet and create the sauce.
Clean the skillet with paper towels. Add butter to the heated pan until it is melted. After that, include the wine. For about 30 seconds, stir the lemon juice and chicken broth. Add salt and pepper to taste. And simmer for about two minutes. When that’s finished, pour this broth over the chicken cutlets and serve. Garnish with lemon slices and parsley.
