Turn Your Thanksgiving Leftovers into a Sandwich
Instead of just snacking on a few leftovers little by little, try eating them in a more appetizing way. With leftover turkey, stuffing, mashed potatoes, and cranberry sauce, you can always give Thanksgiving a second day! Whether you serve your sandwich cold or slightly warm, you will surely enjoy this Thanksgiving leftover sandwich recipe.
What You’ll Need
Extra virgin olive oil
3 slices challah or whole grain bread
3 tablespoons cranberry sauce
Sliced turkey breast, chopped or pulled thigh meat
1 cup stuffing
3 tablespoons sweet potatoes
Hot non-dairy gravy
First, drizzle a little extra virgin olive oil over both sides of challah. The toast challah in a cast iron skillet or medium sauté pan over medium heat for 2 to 3 minutes on each side, until challah is golden brown. Set it aside for later.
Then, schmear on each slice of toasted challah. Do the same with cranberry sauce. Pile the turkey, stuffing, and potato leftovers in layers on top of a cranberry slice. Repeat with the second slice. Stack challah like a club or double-decker sandwich and top it with a 3rd layer, follow the steps for the first two layers. Pour non-dairy gravy over the sandwich, and serve. Enjoy!
